Nizami Cuisine – Nizami Cuisine is called the Hyderabadi cuisine. It is slightly sour, hot and richly endowed with nuts and assorted spices and cooked in desi ghee. Hyderabadi cuisine had become a princely legacy of the Nizams of Hyderabad state which is how it came to be known as ‘Nizami cuisine’. Famous Nizami dishes are mirchi ka salan, hyderabadi biryani, dum pukht biryani, Hyderabadi marag, paaya, maghaz masala, boti kebab, gosht pasinde, malai korma, qabooli biryani, burani raita, dopiyaza, kaluda, badam-ki-jhab, sheer khurma and shahi tukda.
